Gluten G12®, a component of cereal proteins, has the potential to trigger both allergic reactions and immune responses in individuals with celiac disease. Given the prevalence of cross-contamination risks in the food processing industry, it becomes imperative for food producers to safeguard consumers against the inadvertent consumption of gluten and its associated consequences.
The AgraStrip® Gluten G12® test kit is a lateral flow device (LFD) designed to detect gluten on-site in various samples such as raw materials, finished food products, beverages, rinse waters, and environmental samples. Unlike traditional methods, this test utilizes the G12® antibody, a monoclonal antibody that was raised against the immunotoxic 33-mer peptide from the gliadin fraction in gluten. It specifically targets toxic peptides found in gluten that can trigger auto-immune reactions in individuals with celiac disease. By using immunochemical test systems based on the G12® antibody, the results obtained provide a closer approximation to an ideal food safety test. This is because they establish a crucial connection between celiac disease and the detection of immunotoxic peptides, thereby enhancing the overall reliability of the testing process.
