Description
Casein is a group of proteins that are commonly found in milk, comprising approximately 80% of the proteins present in bovine milk. It consists of α-, β-, and κ-caseins and serves as a fundamental component in cheese production. Additionally, caseins are frequently utilized as food additives. As a heat-stable allergen, casein can pose a significant risk for certain individuals due to its ability to withstand high temperatures. Many countries worldwide enforce regulations requiring the explicit labelling of casein in food products because casein is most commonly found in bovine milk, one of the most prevalent allergenic ingredients, especially among children. Although there are no specific legal limits established for casein concentrations, it is strongly recommended that food manufacturers test for even trace amounts of casein.
